Chicken Vindaloo recipe 



You can make the Best Chicken Vindaloo at home with following simple recipe.Actually It is a popular Portuguese impacted Indian dish made by marinating and simmering meat in a spicy paste.

Ingredients:For the marinade 

  • 1 kg chicken(convert into pieces)
  • 4 tablespoons white vinegar 
  • 2 teaspoons salt 
  • 1 teaspoon turmeric powder 

For the Vindaloo paste 

  • 10 to 12 dried red chillies (adjust as require)
  • 1 teaspoon cumin seeds 
  • 1 teaspoon black mustard seeds 
  • 1 teaspoon Fenugreek seeds 
  • 1 teaspoon black pepper corns
  • 6 to 8 cloves 
  • One inch piece of cinnamon 
  • 4 -5 cloves of garlic 
  • One inch piece of ginger 
  • 2 tablespoons white vinegar 
Chicken curry 

  • Three tablespoons oil 
  • Two large onions(sliced)
  • Two tomatoes(chopped)
  • One teaspoon sugar 
  • Give Salt to taste 
  • Fresh coriander leaves for garnish

Instructions 

Marinate the Chicken:

  1. Mix the chicken pieces with vinegar, salt and turmeric powder in a large bowl.
  2. Cover and refrigerate for at least two hours, preferably overnight.
Prepare the Vindaloo paste:
  1. Soak the dried red chillies in warm water for about fifteen minutes.
  2. To smooth paste drain the chillies and grind them along with cumin seeds, mustard seeds, Fenugreek seeds, black pepper corns, cloves, cinnamon, garlic, ginger and vinegar.
Cook the Vindaloo:
  1. In a large pan heat the oil over medium heat 
  2. Add the slided onions and saute until they burn golden brown 
  3. Add the prepared vindaloo paste and cook for 5-8 mins, stirring occasionally.
  4. Add the chopped tomatoes and cook until they soften and blend with the spices.
  5. Add the marinated chicken pieces and mix well to coat them with the spice mixture.
  6. Add sugar and salt to taste 
  7. Cover and cook on low heat until the chicken is tender and the oil starts to separate from gravy.This usually takes almost 30-40 mins.
  8. If the Curry is too thick, you can add a little water to achieve your desired consistency.
